Much like air water is also constantly changing.  Water; however, controls the tides of emotions and moods.  It is the inner feelings that drive us with water.  The sun sets in the west, giving birth to the night, and sometimes can signify death.  Water is represented by water and the chalice.  The creatures of water are undines.
